And cake?<\/p><p style=\"text-align: left;\">Here&#8217;s a light and fluffy recipe that combines the best of both coffee AND a soft cake recipe you&#8217;ll come back to again and again! It&#8217;s easy, delicious and oh so yummy!<\/p><p style=\"text-align: left;\">\u00a0<\/p><h5 style=\"text-align: left;\">SPELT COFFEE AND WALNUT CAKE WITH CREAMY COFFEE FROSTING<\/h5><p style=\"text-align: left;\"><strong>Ingredients:<\/strong><\/p><ul style=\"text-align: left;\"><li>150g Spelt flour<\/li><li>50g Buckwheat or Teff flour<\/li><li>1 and a 1\/2 teaspoons baking powder (I sometimes use 2 teaspoons)<\/li><li>200g unsalted butter, softened<\/li><li>120g coconut\u00a0sugar<\/li><li>4 eggs<\/li><li>60g walnuts or pecans, roughly chopped<\/li><li>2 teaspoons vanilla extract<\/li><li>1 tablespoon oat or coconut milk<\/li><li>30ml fresh brewed coffee (I use the espresso shot on my coffee machine to make it strong)<\/li><\/ul><p style=\"text-align: left;\"><b style=\"font-style: inherit; background-color: var(--ast-global-color-5); color: var(--ast-global-color-3);\">Creamy Coffee Frosting<\/b><\/p><ul style=\"text-align: left;\"><li style=\"text-align: left;\"><span style=\"font-weight: 400;\">100g soften butter<\/span><\/li><li style=\"text-align: left;\"><span style=\"font-weight: 400;\">2 cups powdered coconut\u00a0sugar\u00a0(I powder it in my blender)<\/span><\/li><li style=\"text-align: left;\"><span style=\"font-weight: 400;\">1 teaspoon vanilla extract<\/span><\/li><li style=\"text-align: left;\"><span style=\"font-weight: 400;\">20ml fresh brewed coffee\u00a0(again, I use the espresso shot on my coffee machine but didn\u2019t put it all in. You can if you really like your coffee!)<\/span><\/li><li style=\"text-align: left;\"><span style=\"font-weight: 400;\">toasted walnuts or pecans to decorate OR my sugared pecans recipes <\/span><span style=\"font-weight: 400;\">below<\/span><span style=\"font-weight: 400;\">.<\/span><\/li><\/ul><p style=\"text-align: left;\"><strong>Method:<\/strong><\/p><ol style=\"text-align: left;\"><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Pre-heat the oven to 180\u00b0C. Line a large loaf tin with\u00a0baking paper.<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Sift\u00a0the spelt and baking powder into a mixing bowl and set aside.<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Cream the butter and sugar in a glass bowl (I use a hand beater) until light and fluffy.<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Add the eggs one at a time, beating in-between each. Add 2-4 tablespoons\u00a0of the spelt\u00a0mixture between the 3<\/span><span style=\"font-weight: 400;\">rd<\/span><span style=\"font-weight: 400;\"> and 4<\/span><span style=\"font-weight: 400;\">th<\/span><span style=\"font-weight: 400;\"> eggs to avoid curdling. Scrape down the sides occasionally.<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Aim for a creamy, pale and thick mixture and then add the spelt flour, chopped walnuts or pecans, vanilla extract, milk, and fresh brewed coffee. Beat slow to combine, but don\u2019t over-mix!<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Scoop the mixture into your lined\u00a0loaf tin and bake for 25-30 minutes. Keep an eye on it at 20 minutes and remove as soon as it\u2019s showing signs of being done \u2013 you don\u2019t want to overcook a spelt cake, or it could\u00a0end up a little dry.<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Once it\u2019s ready, take out and\u00a0place the cake aside to cool. Remove from the tin after 10-15 minutes and place onto a board or cooling rack in the baking paper until you\u2019re ready to spread the icing and decorate.<\/span><\/li><\/ol><p style=\"text-align: left;\"><strong>Frosting:<\/strong><\/p><ol style=\"text-align: left;\"><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Cream the butter and powdered coconut sugar in a glass bowl with a hand beater, until light and fluffy. Scrape down the sides occasionally.<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Add the vanilla extract and fresh brewed coffee (a little at a time) and\u00a0beat on low, gradually increasing to high.\u00a0Beat until smooth and creamy.<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Spread the icing over the cooled cake (just warm to the touch if you can\u2019t wait!) and decorate with your chosen nuts or my sugared pecans.<\/span><\/li><\/ol><p style=\"text-align: 400;\">1 teaspoon Himalayan salt<\/span><\/li><li style=\"text-align: left;\"><span style=\"font-weight: 400;\">1 level tablespoon organic virgin coconut oil<\/span><\/li><\/ul>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t<div class=\"elementor-column elementor-col-50 elementor-inner-column elementor-element class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p><b>Method:<\/b><\/p><ol><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Preheat the oven to 180 degrees.<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Place nuts on a tray lined with good quality baking paper and roast for 5 mins.<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">After 5 minutes, remove the hot nuts and scoop into a bowl.<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Put the coconut oil, coconut sugar and salt over the top and stir through the hot nuts until melted.<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Make sure all the nuts are completely coated.<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Spread the coated nuts back onto the baking paper tray and return to the oven for a further 8 \u2013 10 minutes.<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Remove when the nuts are lightly browned, then allow to cool on the baking paper.<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Sprinkle extra salt over the top if desired.<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Store in an airtight glass
